Baked Red Snapper

Try baking this fish for a nice change of pace, and healthy too. It is cooked in its own juices and fish stock.

Baked Red Snapper:

Ingredients:

  • 2 to 3 pounds of medium sized red snapper fillets
  • 3 cloves of minced garlic
  • 1 Tbs of sugar
  • a dash of thyme
  • 4 oz of white wine
  • 5 oz of olive oil
  • 3 oz of red wine vinegar
  • 12 oz of water
  • 1 1/2 tsp of salt


Baking and Cooking Directions:

• Clean and prep the red snapper fillets

• If you bought a whole snapper, you will want to place the fish head and leftovers into a pot and mix in your ingredients of olive oil, sugar, garlic, salt, white wine, thyme, vinegar and water. Let the pot sit on a low to medium heat for approximately 45 minutes. Do not let it bowl, just simmer.

• Next you will strain the fish stock through a fine mesh stock strainer and reserve.

• Place your red snapper fillets into a baking dish or pan so that they all fit nicely.

• Blend in your fish stock liquid into the baking pan, covering the fish fillets.

• Place the baking pan into a preheated oven set for approximately 250 degrees.

• Let the fillets cook for about 35 to 40 minutes. Then turn off oven and remove the pan.

• Serve with french bread or serve over rice with butter.
