Grilled Red Snapper Fillets - Blackened

If you have never tried to blacken a red snapper on the grill, then you have definitely missed some good eating. One of the tricks of doing this right is to not over cook the fish fillet. Give it a try and enjoy your delicious fish creation.

Grilled Red Snapper Fillets - Blackened Style   

Ingredients:

  • 2 to 3 pounds of red snapper fillets
  • blackened seasoning mix
  • warm lemon butter mixture with parsley
  • vegetable oil
Directions:

Clean and rinse the red snapper fillets. Leave the skin on but take off the scales. Next pat the fillets dry with paper towels and let them rest for a moment while you prepare the lemon butter mixture and blackened seasoning mix. Once these are prepared, your are ready to grill your delicious fillets.

• Clean and wipe the grill rack with a little vegetable oil to help with sticking.
• Preheat the grill to about 350 to 400 degrees.
• Sprinkle the blackened seasoning mix generously on each side of the red snapper fillets.
• Place the fillets onto the grill and let cook until just done, (not dried out).
• Flip the fillets just once. Total cooking time should be approximately 3 to 4 minutes per side.
• When you take the fish off of the grill, brush on lemon butter mixture to help keep moist and flavorful.
• Serve right away and enjoy!

Blackened Seasoning Mix:
You can use one of several different store bought varieties or you can mix your own. When making your own, you could try the following ingredients. Mix lightly in a mixing bowl and set aside until ready to spice you your snapper fillets.

Ingredients:
  • 1/4 tsp of salt
  • 1/4 tsp of thyme
  • 1/8 tsp of black pepper
  • a dash of white pepper
  • 1/4 tsp of cayenne pepper
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1/4 tsp of oregano
  • 1/2 tsp of paprika
