Sauteed Red Snapper - Caribbean Style

Red snapper is a fish that can be fixed in so many ways and it still tastes great. This dish is easy and quick to prepare. It is also a healthy choice for many who are concerned about their diet. The following set of ingredients and instructions is a guideline for this red snapper recipe. You may want to use it, and also experiment with alternative ingredients.

Ingredients:

  • 1 to 2 lbs of red snapper fillets
  • 3/4 cup of carrot strips
  • 1 large onion cut in to 1/4 chunks
  • 1/2 cup chopped red peppers
  • 3 Tbsp olive oil
  • 2/3 cup of dry white wine
  • 2 cloves of minced garlic
  • 2 medium size tomatos cut into small chunks
  • 1/4 cup of feta cheese, crumbled
  • 1/8 cup of chopped olives, no pits
Cooking  Directions:

First you will want to clean, rinse and pat dry the red snapper fillets. Take out your cast iron or large regular skillet and heat up the olive on medium heat. Once the skillet is heated, you will saute the garlic, pepper, carrots and onion until the vegetables are tender, then add the white wine and increase the temperature until the ingredients to start a low boil. Next you will need to make room for the red snapper fillets inside the skillet. Cover the skillet and let cook for 4 to 5 minutes or until the fish is done.

Next you can take off the skillet lid and add the chopped olives, feta cheese and tomato chunks. Turn down the heat to about medium and let all of this simmer for a few minutes. This will let all of the juices mix and get tasty. You can now set the table and serve this with french bread in a bowl, or you can serve over rice. Another alternative is to serve over a bed of pasta for a change of pace.
